A Deep Dive Into Federal Regulations

Over the course of 12 monthly sessions, this series will provide a deep dive into learning about the federal regulations for long term care facilities. Actual citation examples, strategies for successfully managing the survey process and understanding the critical element pathways used to guide surveyor investigations and implementing survey preparedness activities to prevent citations will be provided and discussed.

NOVEMBER 14 - §483.60 Food and Nutrition Services

Course Description:
This session will provide an overview of the Food and Nutrition Services regulations at §483.60, with an emphasis on the review the most commonly cited requirements related to Food and Nutrition Services. Strategies to avoid citations related to Food and Nutrition Services will be emphasized through discussion of: Actual citation examples, Strategies for successfully managing the survey process & understanding the critical element pathways used to guide surveyor investigations, & implementing survey preparedness activities to prevent Food and Nutrition Services citations.

Projected Learning Outcomes/Course Objectives: At the conclusion of each session, the learner will:
1. Identify the regulatory requirements related to Food and Nutrition Services
2. Identify survey procedures that describe how Food and Nutrition Services requirements are reviewed for compliance during the annual survey process
3. Identify examples of how Food and Nutrition Services requirements are commonly cited in the long-term care survey process
4. Explain strategies for incorporating survey preparedness related to Food and Nutrition Services into facility QAPI processes
